Château Pavie: A Saint-Émilion Titan
Situated on the historic slopes of the Right Bank, Château Pavie is one of the largest and most prestigious estates in Saint-Émilion. While the property’s viticultural history dates back to Roman times, its modern trajectory was radically redefined in 1998 when it was acquired by Gérard Perse. Perse implemented an extensive modernisation of both the vineyards and the winemaking facilities, a transformation that culminated in the estate’s promotion to the elite rank of Premier Grand Cru Classé “A” in 2012, a status reconfirmed in the 2022 classification. Today, the estate spans an impressive, contiguous 37 hectares, benefiting from a unique south-facing exposition that ensures optimal ripening for its complex blend of Merlot, Cabernet Franc, and Cabernet Sauvignon.
A Style of Uncompromising Power and Rich Density
The architectural hallmark of Château Pavie is its opulent, deeply concentrated, and structurally monumental style. The 2019 Pavie has a very pure and perfumed bouquet with black cherries, kirsch and cassis fruit, controlled and focused. The palate is medium-bodied with grainy tannins, fresh with fine salinity, slightly granular towards the finish that feels cohesive and opulent. In the glass, it begins to show just a bit of alcohol on the finish, prompting me to knock a point off. Tasted blind at the Southwold annual tasting.

Subtle aromas but then the most beautiful and intense palate of flavours and texture. There’s a balance and equilibrium about the best of 2019 that’s exemplified in this wine. Great spice on the finish.

While the 2019 Pavie does display a touch more restraint that the wines produced here a decade ago, it remains one of the most powerful, extracted wines in all of Bordeaux, exhibiting a glass-staining, opaque purple-black color and a rich bouquet of cherries, blackberries and berry fruit liqueur mingled with sweet spices, loamy soil, licorice and rose petals. Full-bodied, powerful and muscular, it’s thick and textural, with a layered, multidimensional mid-palate laden with ripe fruit and rich, chewy tannins, concluding with a long, youthfully grippy finish. The evolution of the early Pese-era wines at age 20 leads me to suspect that time will be kind to this 2019, but couldn’t this great sitea which naturally delivers elevated maturity combined with low pHa be rendered with more charm and sensuality?

The 2019 Pavie is incredibly elegant right out of the gate. Aromas of crushed rose petal, cedar, mint and sweet pipe tobacco are immediately alluring. The 2019 is sensual and inviting, with no excess weight and fabulous overall balance. Blood orange, red/purplish fruit, cinnamon and mint develop effortlessly. Time in the glass brings out Cabernet Franc aromatics and structure, leading to a feeling of vertical intensity that is hugely appealing.

50% Merlot, 32% Cabernet Franc, 18% Cabernet Sauvignon. First year there s been a 50/50 Merlot/Cabernets split. Barrel sample. Deep purple-black to the rim. Dark, ripe and complex with a leafy, blackcurrant note. Still assertively tannic and powerful but there s a little more restraint and the tannins are polished and refined. Cool limestone terroir shows. Finishes on a muscly, chewy note. Plenty of wine but will need time. (JL)
