Based in the village of Chassagne-Montrachet, Domaine Pierre-Yves Colin-Morey (commonly abbreviated as PYCM) is widely recognised as one of the most brilliant, modern forces operating in the Côte de Beaune. The estate was established in 2001 by Pierre-Yves Colin, the eldest son of Marc Colin, and his wife, Caroline Morey, combining select family vine inheritances with meticulously managed grower contracts. Pierre-Yves had already earned a stellar reputation while directing the winemaking at his father’s domain, but his independent project quickly achieved international cult status. Today, the estate spans roughly 13 hectares across Saint-Aubin, Chassagne-Montrachet, Santenay, Puligny-Montrachet, and Meursault. Revered by a generation of sommeliers and collectors, PYCM stands as a definitive reference point for the renaissance of hyper-precise, cool-climate Chardonnay.

A High-Tension Style of Reductive Brilliance and Waxed Precision

The signature winemaking style at Domaine Pierre-Yves Colin-Morey is celebrated for its striking vertical tension, laser-like acidity, and a distinctive, flinty “struck-match” reduction. Pierre-Yves was among the first of his generation to fundamentally alter cellar practices to combat the region’s historical issues with premature oxidation. In the cellar, the grapes are whole-bunch pressed gently over long cycles, and the juice is transferred directly into larger, 350-litre French oak casks (demi-muids) rather than traditional barriques, curbing excessive wood influence. The wines age for up to 20 months in an exceptionally cold cellar to slow down the malolactic conversion, completely bypassing the practice of bâtonnage (lees stirring). The resulting wines are tightly wound and incredibly energetic, trading on piercing salinity and citrus pith. To guarantee flawless, long-term ageing, every single bottle is famously finished without filtration, enclosed with extra-long untreated corks, and sealed with an iconic layer of structural green wax.
