Chiselled Precision in White Burgundy

The white wines of Henri Boillot are celebrated for their clarity, driving energy, and structural definition. The crown jewel of the estate is the four-hectare monopole, Puligny-Montrachet Premier Cru Clos de la Mouchère. To preserve the site-specific minerality and vibrant acidity of these Chardonnays, the winemaking utilises whole-cluster pressing, native yeasts, and an early harvest strategy. Ageing takes place predominantly in larger 350-litre oak barrels rather than standard barriques, a technique that reduces wood contact and prevents the fruit from becoming overshadowed by oak character.
