Dom Perignon Champagne: The Epitome of Luxury

The most famous of Champagnes and one of the most recognisable brands on the planet, Dom Perignon is emblematic of exclusivity, luxury and all things ‘fine’. This reputation is richly deserved.

The History of Dom Perignon

Dom Perignon is named after a Benedictine monk who was a 17th-century monk and winemaking pioneer. Owners Moet & Chandon released their first vintage in the 1930s, and it has since gone on to achieve global fame. It is a must for collectors and connoisseurs and a fixture on the wine lists of top restaurants, clubs and nightclubs.

The Style and Substance

Dom Perignon is a classic blend of Pinot Noir and Chardonnay, always from a single vintage. Access to a peerless array of crus and the finest grapes produced within those vintages means that consistent quality is always guaranteed. Winemaking is no expense spared and second to none. It is always released with significant bottle age, which allows the wine time to mature and gain complexity and depth.

The house style is one of intensity, structure and power while always remaining elegant, refined and balanced. While every vintage is different, the theme that runs throughout the years is poise, sophistication and class.

The Dom Perignon P2 & P3

Dom Perignon is revered for its magnificent ageing potential. Experienced tasters have, however, noted that it tends to go through periods where it is open and expressive before closing for a few years only to open again. Dom Perignon calls these periods ‘Plenitudes’ of maturity. It is a time when the champagne has a perfect sense of completeness and harmony. For this reason it keeps small amounts back and releases them from its cellars under the rare P2 and even rarer P3 labels, only when the expert Cellar Masters have decided that they are showing particularly well. Thanks to their rarity, maturity and provenance, these are instant collectors items.

From magnum.Burnished colour, copper hue. Drying on the palate and lacking some charm. Very savoury, taut, rather lacking fruit and not a lot of fun. One of those 1996s where the fruit has lessened while the acid hasn t softened. Not likely to improve much. (AWH)

Another example of this era, the 1996 Dom Perignon Rose offers plenty of energy and tension, both signatures of the vintage. At the same time, though, the fruit never fills out, which tilts the balance to acidity and austerity. Frankly, I liked the 1996 more when it was younger. Today, the fruit has either begun to drop out or is simply less expressive. I look forward to checking in on the 1996 soon to see if this may have been a less than perfect example. Disgorged 2004. In a strange way, this rose has a similar personality to the Dom Perignon 1969 tasted in tandem. Its aromatics are hewn from rock " Alpine fresh flecked with Morello and wilted rose petals. The palate is crisp and tense with superb acidity, understated at first but building towards a refined finish of rosewater and blackcurrant leaf. This is just a beautiful champagne that shimmers with tension and refinement, one almost too delectable to cellar. Tasted November 2012. [Neal Martin, 01/11/2012]

Vinous 95

Bright, amber-tinged pink with pinpoint bubbles. Deep, smoky and complex, with a kaleidoscopic bouquet incorporating wild strawberry, peach, apricot, chestnut honey and cured meat. A firm, strikingly concentrated midweight with powerful flavors of orange peel, raspberry, redcurrant, baking spice and smoked meat and gentle supporting acidity. Smoky, sweet and long on the back, with a slowly building impression of acidity that suggests this will be a long ager. As usual, a stunning Champagne. Also tasted: NV White Star, 1999 Millesime Rose Brut*. [Josh Raynolds, 11/01/2006]
